- 12 oz Linguine
- 1 lb Raw shrimp (peeled and deveined)
- 3 tablespoons Olive oil
- 2 tablespoons Butter
- 4 cloves Garlic (minced)
- 1 tablespoon Lemon zest
- 2 tablespoons Fresh lemon juice
- ½ teaspoon Red pepper flakes (adjust to taste)
- Salt (to taste)
- Black pepper (to taste)
- 1 cup Crème fraîche
- Grated Parmesan cheese (for serving (optional))
- ¼ cup Fresh parsley (chopped)
- ¼ cup Fresh basil (chopped)
- Lemon wedges (for garnish (optional))
Instructions
- Set a large pot of water to boil. Add a pinch of salt. Cook the linguine for about 8-10 minutes until al dente, stirring occasionally to prevent sticking.
- While the pasta is cooking, heat the olive oil and butter in a large skillet over medium heat. Wait until the butter is melted and slightly foamy, about 1-2 minutes.
- Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant but not browned. Be careful not to burn the garlic as it will become bitter.
- Add the shrimp to the skillet and cook for about 3-4 minutes until they are pink and opaque. Turn the shrimp to ensure even cooking.
- Add the lemon zest, lemon juice, red pepper flakes, salt, and pepper. Mix everything well and let it simmer for another 1-2 minutes to combine the flavors.
- Reduce the heat to low and add the crème fraîche to the skillet. Stir well until the crème fraîche is evenly distributed and heated through, about 1-2 minutes.
- Once the linguine is done, drain it and reserve some pasta water (about ½ cup). Add the linguine to the skillet with the shrimp mixture and mix well. Add reserved pasta water as needed to thin the sauce.
- Finally, fold in the fresh herbs (parsley and basil). Taste the dish and add more salt and pepper if desired. Serve the dish immediately.
